Pan Bread Pudding

This is a simple hot breakfast I make pretty often. It can be cooked for a single person or for family of four if you triple of quadruple ingredients. Sometimes I substitute bread with fresh brossoli floretts or green beans but the idea is the same: something fried, then mixed with eggs right in a pan, seasoned, sprinkled with cheese and finished on a low heat under the lid. It never fails for me, it's always tasty and satisfying.

Pan Bread Pudding




For a single serving:

bread cut in 1/2" x 1/2" cubes  - 1 generous slice
eggs - 2 or 3
feta or any other cheese crumbled or grated - 4 tbs
olive oil or butter - 3-4 tbs
salt, pepper

- In a pan with olive oil, on a medium heat, fry bread pieces until golden-brown and crispy.

- Turn heat on a lowest setting, break eggs right into the pan with bread, add salt, pepper and stir everything briefly, toss cheese on a top, cover tightly with a lid and let it cook for about 10 minutes until eggs set and cheese melts or becomes soft (if you use feta).

- While it cooks make yourself good cup of coffee or tea and you are all set up now for a beginning of a great day!
