Peanut Vegetable Salad

For fellow peanuts and peanut butter lovers - this is a fresh "all about peanuts" salad, healthy, filling and delicious option for your dinner.

Peanut Vegetable Salad


Intro

Salad is my number one choice for after-work meal. That is when I catch up on my daily fresh vegetable intake, it is healthy and light meal for the end of a day.

Although I just need something substantial in my salad - it may be some kind of legumes canned - easy choice), pieces of cheese or nuts. This time it's all about peanuts - more is better ;)

Because of peanuts, soy sauce and heat from chili pepper powder the salad has somewhat oriental tone to it.


What is it?

Roman lettuce + other fresh vegetables + canned peas (for added protein) + crushed peanuts + peanut butter sauce = nice and lovely salad.

Taste Description

Peanuttttttty! It's juicy and crunchy with a strong slightly sweet peanut taste. Canned green peas adds smooth substance to the salad. You will also taste nice saltiness from soy sauce and warm tingling from red chili pepper powder.


How to Serve

Serve as a pre-course to your entree or as a side to your main protein dish or on its own as a great healthy evening meal.

Peanut Vegetable Salad 

 
  • romaine lettuce, chopped
  • 1 bell pepper, sliced
  • 1 large carrot, very thinly sliced or grated
  • 1 can green garden peas, drained
  • 2 cups dry-roasted unsalted peanuts


Dressing:

  • 2 tbs peanut butter
  • 3 tbs light soy sauce
  • 1 lime, juice of
  • 1 tsp Korean ground red chili pepper (or dash of regular red pepper flakes)
  • 1 cup hot water
  • 2 tbs light olive oil (optional)
  •  
- Make dressing by slowly adding hot water (I usually boil water in my kettle for this) and then adding the rest of dressing ingredients. If you would like your dressing thinner - add more hot water. Adjust the taste by adding more acid element (lime juice or rice vinegar), by adding more soy sauce or even may be adding some sugar :) But most likely you'll like the ratio I've given above.

- In a mortar or a food processor, crush peanuts into small pieces.

- In a large bowl, mix chopped vegetables, peas, half of crushed peanuts and peanut dressing together.

- Serve with the rest of peanuts sprinkled on a top of salad - enjoy!
